dark chocolate truffles with orange

   A last minute dinner invite. I know I am expected to bring something made by me -  a little naughty habit I have given them through the years. What's to do, then? A rummage in the pantry, of course.
   And here is what came out of it: some dark chocolate, a bit of cream cheese, an orange, a bottle of Cointreau....





Ingredients - makes about 20 Truffles

100g dark chocolate (100% cocoa content)
2 green cardamom pods
1 knob of butter
50g cream cheese
the grated rind of 1 orange
3 tbs Cointreau
unsweetened cocoa powder

   In a bain-marie pan, melt the chocolate with the cardamom pods and the butter. Remove from the heat, eliminate the cardamom and beat in the cream cheese, the orange zest and the Cointreau. Put it in the fridge for about half an hour to cool and harden.

   Put a few tablespoons of cocoa powder in a little bowl. With the help of 2 teaspoons, form little quenelles out of the chocolate mixture. Turn these in the coca powder, then roll between your palms to form little round balls about 2-3cm in diameter. Roll these again in the cocoa powder and refrigerate until it is time to serve.
   They work beautifully as an after coffe.
